Watermelon & Feta Salad with Vodka Dressing

A nice salad with a naughty twist!

Serves 4


  • ¼ seeded watermelon, rind removed and cut into thin wedges
  • 1 cup fresh mint leaves
  • ½ red onion, cut into thin wedges
  • 50g Oliana feta, thinly sliced
  • 2 tbs red wine vinegar
  • 2 tbs Oliana olive oil
  • 1 tbs vodka
  • Salt and freshly ground black pepper


To make the vodka dressing, whisk together the vinegar, olive oil and vodka in a medium sized jug. Taste and season with salt and pepper.

Arrange watermelon, mint, onion and reduced-fat feta on a serving plate. Drizzle with vodka dressing and serve.
