Semi-dried Tomato, Feta and Olive Savoury Muffins

A real crowd pleaser, these savoury muffins make a great snack or fantastic lunch-box filler.

Makes 12


  • 2 cups flour
  • 1 tbsp baking soda
  • ½ tsp salt
  • 1 egg
  • 2 tbsp sugar
  • 1 cup milk
  • ½ cup Oliana olives, pitted and chopped
  • ½ cup Oliana feta
  • ¼ cup Oliana semi-dried tomatoes
  • 3 tbsp of oil, drained from tomatoes


Preheat oven to 180°C.

Grease muffin tins with butter or spray oil.

Combine flour, baking powder and salt in a large bowl.

In a separate bowl lightly beat the egg. Stir in tomato oil, sugar and milk and pour into flour mixture all at once. Mix until all combined. Stir in tomatoes, olives and feta.

Pour into muffin tins and bake for 25 minutes or until golden brown and muffins spring back when touched.
