Penne, Olive Oil, Spinach and Chorizo Pasta
Comfort food that doesn’t leave you feeling weighed down. This deliciously simple pasta dish is sure to become a staple in your recipe repertoire.
- 250g Oliana Penne
- 500g chorizo sausage
- 1 tsp Oliana olive oil
- 2 garlic cloves
- 1 cup of chicken stock
- 1 red capsicums cut down the length and seeds removed
- 150g baby spinach
- ¼ cup parmesan cheese
Boil a large pot of lightly slated water and cook pasta until al dente.
Meanwhile, cook chorizo in a large frypan until lightly browned. Remove from pan and set aside. Heat oil in pan and cook garlic until soft and fragrant. Return chorizo to the pan and add the capsicum and chicken stock. Leave on low heat and simmering.
Once pasta is cooked, drain and return to the pot. Add the chorizo mixture and fold through spinach and parmesan. Serve with extra parmesan according to taste.
