A brilliantly vibrant, fresh and light salad that will brighten up any meal
- 4 firm, ripe tomatoes, roughly chopped
- 2 Lebanese cucumbers, roughly chopped
- ½ red onion, sliced into rings
- ½ red capsicum, seeded and roughly chopped
- 100g Oliana kalamata olives
- 110g Oliana feta
- ½ tsp dried oregano
- ½ tsp salt
- 60ml Oliana olive oil
- 30ml white vinegar
Combine tomato, cucumber, onion, capsicum, olives and organic feta into a salad bowl. Sprinkle with oregano and salt.
Whisk together the olive oil and vinegar in a jug. Drizzle the salad with dressing and toss to combine.
